Ingredients
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon chipotle peppers in adobo minced
- 1 teaspoon garlic powder or 1 clove fresh garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- 1-2 teaspoons honey or maple syrup optional, for balance
- Black pepper to taste
Instructions
- Make the Marinade: In a small bowl or jar, combine all ingredients. Stir or shake well until smooth.
- Add Chicken: Place 1½–2 lbs of chicken (breasts or thighs) in a zip-top bag or container. Pour marinade over the chicken, seal, and turn to coat.
- For same-day use: Refrigerate for 30 minutes up to 12 hours.
- For later: Freeze immediately. Thaw in the refrigerator 1–2 days before cooking.
- Cook: Grill, bake, or pan-cook the chicken until fully cooked (internal temperature should reach 165°F / 74°C). Slice and serve as desired.
